Happy National Grilled Cheese Day!

A grilled cheese sandwich is one of the most comforting foods that you can make. It’s simple, satisfying, and always hits the spot. Whether you're craving a quick lunch or a cozy dinner, this classic dish never disappoints. While many people prefer to make it in a pan or under the broiler, there's something special about cooking it on an outdoor grill. Not only does it add a delicious smoky flavor, but it also gives the bread that perfect crispy texture that you just can’t get any other way.

Grilling your grilled cheese on a PGS Grill is a great idea, especially if you're hosting a summer barbecue or gathering. It adds a fun twist to your menu and makes for a unique experience that your guests will remember. One standout option is the Crunchy Fajita Grilled Cheese, which combines the classic comfort of melted cheese with the bold flavors of fajita ingredients. Here's how to make it.

The Recipe

To create the ultimate Crunchy Fajita Grilled Cheese, you’ll need a few key ingredients:

  • White bread sliced no more than half an inch thick
  • Monterey Jack cheese
  • Diced jalapeños
  • Grilled green peppers
  • Grilled onions
  • Soft butter
  • Tortilla chips

If you're looking to add some extra protein, consider adding shredded rotisserie chicken or thinly sliced steak. This makes the sandwich even more hearty and flavorful.

Recipe and Grill Preparation

Before you start grilling, make sure your PGS Grill is clean and preheated to medium heat. While the grill warms up, prepare your sandwich by spreading a generous layer of soft butter on both slices of bread. Place two slices of Monterey Jack cheese in the center, then top with diced jalapeños, grilled peppers, onions, and tortilla chips. If you’re adding chicken or steak, layer those on top as well. Be mindful of your guests’ spice tolerance, as jalapeños can be quite spicy.

Grilling

Once the grill is ready, place the sandwich over direct heat and close the lid. Let it cook for about 3 minutes on one side until the bread is golden and crispy. Flip it over and cook for another 2 minutes on the other side. You'll end up with a perfectly grilled sandwich that has melted cheese, crispy edges, and beautiful grill marks.

Eating

Enjoy your Crunchy Fajita Grilled Cheese right away while it's still warm and gooey. The combination of crispy bread, melted cheese, and zesty fajita ingredients creates a mouthwatering experience. Pair it with a cold beer, some chips and salsa, or a bowl of chicken tortilla soup for a complete meal that’s sure to impress your guests.
